Coconut milk is a thick, white liquid commonly used in Southeast Asian cuisines as a way to improve the flavour of all sorts of dishes. Its aromatic properties are guaranteed to give your recipes an exotic touch.

How is coconut milk made?

In order to make coconut milk, the white flesh found on the inside of mature, brown coconuts is scraped off, mixed with water and wrapped in a cloth. This cloth is then firmly squeezed and voilà, you’ve got coconut milk! Did you know that about half a litre of coconut milk can be obtained from a single coconut? Coconut milk should not be confused with coconut water, which, unlike coconut milk, is found naturally within coconuts, especially within young, green ones. If you’ve ever seen the inside of a coconut, you’ll know it has a thin layer of moisture. This is what is meant by coconut water. Coconut water is not used for cooking, but rather as a refreshing beverage. Coconut milk and coconut cream are again two different things. While they are both obtained from the coconut’s flesh, they differ in their water content: coconut milk contains more water and is therefore less concentrated than coconut cream.

What is coconut milk used for?

Coconut milk was originally confined to Southeast Asian cuisines, but has since found its way around the globe, being a popular ingredient in rice and curry dishes all over the world. Coconut milk is much more than just an exotic flavouring, though. You can use it to create new textures by adding some to your soups and sauces. It tastes particularly good with tomato and sweet potato soups. Likewise, if you fancy something different, try adding it to drinks such as smoothies and cocktails. Coconut milk is also an excellent alternative to cow’s milk. How about making pancake batter with coconut milk instead of cow’s milk?

Properties of coconut milk

Coconut milk is a nutritious food, rich in vitamins C, E and B, which are all essential for the adequate functioning of the body. Another benefit of coconut milk is that it does not contain lactose and so people who suffer from lactose intolerance won’t experience any trouble digesting it. Keep in mind, though, that coconut milk contains quite a few calories and should not be consumed in excess.
