Do you know the ´Gelderse rookworst´, translated in smoked sausage from Gelderland? It is a product that originally comes from the Netherlands and that's known and sold little outside of the country. This Dutch sausage of finely grinded pork that is well seasoned and then put in a casing to keep the meat together, is famous in The Netherlands. There are also smoked sausages that are made from other meat such as beef, horses, lamb and veal. But in the Netherlands they are a lot less  popular than the smoked sausage from the province of Gelderland. Nice fact: Did you know that every person in the Netherlands eats an average of six smoked sausages per year? That means that about one hundred million smoked sausages are eaten every year in the Netherlands alone.

Unox rookworst

Since 1937 the brand Unox has made, according to most, one of the tastiest smoked Dutch sausages. Something that distinguishes the Unox smoked sausage from other brands is the unique herb combination that is added to the meat. So there is only one type of smoked sausage that can call itself the real Unox smoked sausage from Gelderland.

A small piece of history about Unox smoked Dutch sausage

The Gelderland Smoked sausage originally comes from the province of Gelderland, where many pig farms used to be found. The pigs received good and healthy food and the province was therefore known for the high quality of pork produced there. After slaughtering the pigs, the meat was finely grinded, seasoned, put in a casing and hung in a smokehouse, hence the name smoked sausage. Smoked sausages were originally made in November because it was the slaughter month. And coincidentally November was, in The Netherlands, also the kale month. Smoked Dutch sausage was therefore often eaten together with kale and this dish remains very popular to this day. Nowadays, smoked sausage is also eaten a lot with other types of vegetables mixed with potatoes, like carrots and sauerkraut. A smoked sausage is also delicious on a sandwich as an alternative to a hot dog. So you can eat a smoked sausage year round!

The crooked shape of a smoked sausage

Do you know why the rookworst has a crooked shape? The reason is as followed. So as we know, smoked sausage is being put in a casing. Once the meat is in the casing, knots are
made at the ends. Then the smoked sausage is hung on the knots in a smokehouse. Because the smoked sausage hangs on those knots, it is already in a round shape. The casing also shrinks in the smokehouse through the heat and through the smoke. This makes it even tighter and the smoked sausage is fixed in a curved shape.

  • Ingredients Pork 94% (of which 18% mechanically separated), water, salt, acid: citric acid, bovine collagen, stabilizer (E451, E452), smoke flavouring, antioxidant (ascorbic acid, rosemary extract), spice extracts (nutmeg, pepper, chili pepper), coriander extract, preservative E250.
  • Preparation In a pan: Put the smoked sausage -inside the closed inner wrapping- in hot, but not boiling, water for a quarter of an hour. Leave the sausage to cool for a minute before cutting. In the microwave: Take the smoked sausage from the outer wrapping, pierce a hole in the inner wrapping and heat for 2½ minutes at 500 watts. Leave the sausage to cool for a minute before cutting.
  • Preservation Store at room temperature. After opening the inner wrapping store the sausage covered in the fridge for max. 3 days.
