Lemon curd is a specialty of English cooking! This creamy spread is made from the basic ingredients egg yolk, sugar and lemon juice. The taste from this curd, which is mostly used as a substitute for jams, comes from the lemon and sugar. The egg yolk is actually only used to make the curd thicker. Sometimes a little bit of butter is mixed in at the end to give the lemon curd an extra creamy taste.

A little history
Although not exactly know when lemon curd was invented, in cooking books dating back to 1844 there are mentions of it in recipes. For example in the cooking book ´The lady´s own cookery book´ by Lady Charlotte Campbell Bury. Further back you can find mentions of lemon cheese, a type of curd used for baking cakes. In those times lemon curd was mostly an alternative for jams. It was used to serve with bread and scones to accompany the tea, as well as filling for cakes, small baking and tarts. Lemon curd was prepared in relatively small amounts, because they couldn´t conserve it as well as jam. Nowadays you can find a jar of lemon curd from different (English) brands, such as Chivers, Triptree and Gale´s. Since the lemon curd is manufactured industrial it has a longer conserving time. Of course you can also still find recipes to make your own lemon curd.

Use of lemon curd
You can use lemon curd on of with anything were you would use marmalade on to give it a special touch, or taste in this case. Put it on a warm toast for breakfast, add it to your scones for afternoon tea, use it as a filling for cakes and pastries or at flavor to your dessert or yoghurt by adding some lemon curd. Furthermore you can make a nice dipping with marmelade by mixing lemon curd with for example cream cheese. And Lemon-meringue pie has been a favorite dessert in England since the 19th century. Curds now aren´t only made from lemons of course! There is also variety of curd that uses other citrus fruits such as lime, mandarin, passion fruit, and mango and also berries like blueberries or blackberries.
