Eel, regarded as an exquisite delicacy, is very popular in the Netherlands, Belgium, Germany and the Scandinavian countries, where it is most often eaten smoked. On special occasions, smoked eel makes for a perfect appetiser, which you will be able to prepare within minutes. It is as easy as placing smoked eel fillets on toasts or small slices of bread spread with butter or cream cheese. You may dress it with salt and pepper or combine it with a more sophisticated garnish, such as finely chopped onion, fresh cucumber or chives. No matter how you prepare it, smoked eel is an ideal starter for a fancy dinner. Besides, did you know that eel is good for your health, containing as it does omega-3 fatty acids?

Eel fishing
Eels, found in both fresh and salt water, inhabit nearly all European rivers flowing into the Atlantic Ocean and Mediterranean Sea. Once they reach maturity, they migrate across the Atlantic Ocean to the Sargasso Sea in order to reproduce. From there, their larvae set out on a return journey back to Europe, dragged by the Gulf Stream. Upon arrival, they remain in rivers for most of their lives, which is where they are fished, in addition to being grown in fish farms. Owing to its broad geographical range, eel has become part of the culinary traditions of many countries, either stewed, fried or grilled. In Southern Europe, including Spain, eel juveniles, called glass eels, are highly valued. However, smoked eel, characteristic of Northern European cuisine, is indubitably one of the most renowned specialties.

Eel smoking
The most refined palates distinguish the flavour of eel according to the wood with which it has been smoked. In the Netherlands, smoking traditionally involves oak wood, as well as beech and spruce wood. In order to prepare other dishes, eel is commonly sold fresh in markets and fish shops, sometimes even alive. Be warned, though, that eel must always be cooked, since its blood, when raw, is toxic to humans. Nowadays, supermarkets also offer frozen packages of eel already smoked and filleted, ready to thaw and serve.
